It seems that lately that I don't know what I am going to be in the mood for from day to day. I haven't been planning my dinners, since I will make a set plan and then discover later that I don't feel like what I have planned at all. For example, I have had fish tacos slated now for the past two days; only to bump them once again for this casserole. Go figure!

I think I will serve this yummy and simple casserole with a side salad and call it good!
