GG's Lasagna



My friend, Claire has been telling me about her grandma's lasagna for years now. I've always wanted to try it, but alas, she has never posted the recipe until recently. It's always good to have a couple of good lasagna recipes in your back pocket, and until this one, I've always just stuck with my mom's recipe. Well, once Claire updated her blog with GG's recipe, I knew lasagna was going to be on our table posthaste. Let me tell you, GG did not disappoint. It. was. fantastic. My kids loved it, and my husband said that it was one of his favorites (Secretly, I think he liked GG's lasagna better than my mom's version, but he knew better than to say that out loud.) The best news is that I now have a second lasagna recipe to alternate between my mom's. If you are in the market to try an awesome lasagna, this one is highly recommended!!!

GG's Lasagna

Sauce:
1-1/2 lb. ground beef
1 small onion, chopped
2 cloves garlic, minced
2 8-ounce cans tomato sauce
1 cup water
1 T. dried parsley
1 t. oregano
3/4 t. salt
1/4 t. thyme
1 bay leaf

Simmer. Remove bay leaf before using sauce.

Other ingredients:
1 cup sour cream
8 ounces cream cheese
8 ounces lasagna noodles, cooked
2 cups shredded mozzarella cheese

Mix together sour cream and cream cheese.

Assemble in a flat baking dish and layer:
1/3 cup sauce, noodles, cream cheese and sour cream, mozzarella. Keep layering until mozzarella cheese is on top.

Bake 45 minutes at 350.

Lasagna Cupcakes

This was a cheap, easy, and DELICIOUS version of lasagna that
my friend, Claire posted on her blog a week or so ago. The recipe seemed so family-friendly I knew I had to try it right away. Oh man, I am glad I did...we LOVED these fantastic lasagna cupcakes!


Lasagna Cupcakes

Ingredients:
24 won ton or gyoza wrappers
Marinara sauce
1 lb. Italian sausage or ground beef
Ricotta cheese
Mozzarella cheese

Directions:
Spray or wipe a cupcake/muffin tin with olive oil. Place one wrapper in the tin form it into a cup shape. Add a small dollop of pasta sauce then some sausage. Add a spoonful of ricotta cheese. Once you filled in the first layer, gently press another wrapper on top of the ricotta layer, forming another cup. Repeat the filling and top each with shredded mozzarella.

Bake at 375 for 20 minutes.





The Result:
As I said, these are awesome! I deviated from the instructions a little and just combined my Italian sausage and sauce together. I don't think it really made much of a difference, because our cupcakes turned out great! Yum, yum, yum!

Greek Eggplant and Chicken Casserole

I have a ton of recipes saved in my email, sent from friends or ones that I email myself from different websites. Unfortunately, I never remember that they are there waiting for me. I swear my memory has gone completely down the tubes...I blame the kids. Anyway, I was looking for something the other day and I finally stumbled upon my email folder with all these yummy-sounding recipes, some of which I discovered are over a year old. Sheesh! I need to look at that email folder more often, that's for sure. Anyway, this casserole was from a Weight Watchers recipe collection email that Claire had sent me a few months ago. There were quite a few casseroles on the list that I wanted to try, but this one intrigued me the most. It is very similar to a lasagna, using eggplant instead of noodles. I think this may be one of my new favorite ways to have eggplant; it was delicious! We steamed some broccoli for a side item, and this dinner basically disappeared. Everyone loved it!

Greek Eggplant and Chicken Casserole

Ingredients:
olive oil cooking spray
2 medium raw eggplant, peeled and cut lengthwise into 1/4-inch-thick slices
3/4 tsp table salt
1 pound(s) uncooked extra lean ground chicken breast
1 cup(s) onion(s), sliced
4 clove(s) (medium) garlic clove(s), minced
2 Tbsp parsley, fresh, chopped
1/3 tsp dried parsley
1/3 tsp chives or minced onions, dried
1/3 tsp dried tarragon
1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
salt and pepper to taste
28 oz canned diced tomatoes
2 Tbsp canned tomato paste
1 1/2 cups Grated Parmesan cheese, grated
1/2 cup of reduced-fat 2% sharp cheddar cheese,grated

Directions:
Preheat oven to 350ºF. Coat a 9 X 13-inch baking pan with cooking spray and set aside.

Place eggplant slices on paper towels and sprinkle with 3/4 teaspoon of salt; let stand 20 minutes to draw out moisture.

Meanwhile, coat a large nonstick skillet with cooking spray; set pan over medium-high heat. Add chicken; cook until browned, breaking up meat as it cooks, about 5 minutes. Add onion and garlic; cook, stirring often, until onion is soft, about 3 minutes more. Add fresh parsley, dried herbs, cinnamon, nutmeg and salt and pepper to taste; stir to coat. Cook until herbs and spices are fragrant. about 1 minute.

Add tomatoes and tomato paste; bring to a simmer. Reduce heat to low and simmer, uncovered, until sauce thickens, about 15 minutes. Transfer mixture to a large bowl and set aside.

Off heat, coat surface of same skillet with cooking spray; set pan over medium-high heat. Wipe salt from eggplant slices with paper towel and add eggplant to hot skillet. Cook, until golden brown, about 2 minutes per side.

Arrange half of eggplant slices on bottom of prepared baking pan, slightly overlapping pieces to cover entire surface of pan. Top eggplant with 1/2 of the chicken mixture; top with 1/2 of the amount of grated Parmesan cheese. Top with remaining eggplant slices and the remaining chicken mixture. Top with the 1/2 cup of cheddar cheese and the remaining grated Parmesan cheese.

Bake until top is golden brown and filling is hot, about 30 minutes. Let stand 5-10 minutes, slice into 8 pieces and serve.





The Result:
This took a little while to pull together, but it was worth it. My whole family loved it; especially my kids. This casserole tasted like a great compromise between a standard lasagna and a Greek moussaka. Really, it was the best of both worlds. I love that it was healthy, but still so flavorful and satisfying. Yum! I am really looking forward to these leftovers.

Polenta Lasagna

We had some friends over for dinner, which was an excellent excuse to try this recipe that my friend, Claire had posted on her blog. Claire got the original idea from her friend Heather, and then took it from there. I basically took Claire's version and did my own thing. This was a delicious twist on traditional lasagna that we all enjoyed. A fresh green salad rounded out our meal. Yum!

Polenta Lasagna

Ingredients:
olive oil
2 tubes of heat and serve polenta
1 onion, diced
1 package of sliced mushrooms (I used crimini)
5 garlic cloves, minced
1 lb. of hot Italian pork sausage
1 lb. of lean ground beef or bison
1 jar of your favorite marinara sauce
1 tsp dried basil
1 tsp dried oregano
1 tsp dried thyme
sprinkle of garlic powder (optional)
sprinkle of chili powder (optional)
1 tablespoon of tomato paste
salt and pepper to taste
1 ball of part-skim mozzarella, shredded
Parmesan cheese, grated
1 container of low-fat ricotta cheese
cooking spray

Directions:
Spray a 9 x 13 baking dish with cooking spray and set aside. Preheat oven to 375 degrees. Pour 1/3 of the marinara sauce in the bottom of the baking dish and set aside.

Slice polenta into rounds and brown on both sides in a non stick skillet. Set aside.

Saute onions, mushrooms in the same skillet with a tablespoon of olive oil until the veggies are soft. Add garlic and saute for another 30 seconds. Set aside.

Remove casings from pork sausage links and brown in the same skillet with the ground beef (or bison). While browning, season with salt, pepper, and the dried herbs and spices. When meat is cooked, pour the remaining marinara sauce in with the meat and stir to combine. Add tomato paste and reduce the meat/sauce mixture until thick and bubbly. Set aside.

In the 9 x 13 baking dish place a layer of the cooked polenta rounds, the cooked veggies, a layer of half of the shredded mozzarella cheese, a layer of the ricotta, a layer of the meat/sauce mixture, another layer of the polenta rounds, a layer of the remaining mozzarella cheese, and Parmesan cheese for topping. Bake at 375 degrees for 30 minutes, uncovered. Remove from oven, and cool for 5 minutes before cutting. Cut into squares and serve immediately.

The Result:
Oh man, this was fan-freakin'-tastic! We all loved this take on lasagna and substituting polenta in place of traditional noodles made it really special. Once again, we were so eager to start eating I forgot to take a photo. It ended up plating a little messy, but it tasted awesome. The photo would not have done it justice. Anyway, I highly recommend this dish! Yum!!!

Spinach & Mushroom Lasagna

I find spinach lasagna normally pretty heavy and flavorless. I have tried several different attempts and they all tend to turn out the same...very one-dimensional and ho-hum. It is hard to love white, gloppy, overly-creamy sauce, starchy noodles, and boring, blah, frozen spinach(*). The whole dish is usually just a bunch of superfluous calories without packing a true flavor punch.

(*Although, I will add a caveat here. I am not a fan of frozen spinach. While it is convenient, it just tastes very metallic to me.)

The bottom line is that I don't usually like to spend a lot of time on a labor-intensive dish--such as lasagna--and not have it be a totally rewarding dining experience. Until now, I had basically decided to write spinach lasagna off as a dish that was just not worth the effort. Thankfully, this recipe has restored my faith. I have finally found a version of this dish that my whole family loves, and that is everything I had hoped for in the flavor department.

Well, sort of...

I had to do some of my own tweaking to get it the way I wanted it, but the end result was spot-on. I started with America's Test Kitchen Light & Healthy 2010 cookbook's take on spinach lasagna. Then I made so many changes it barely resembled the original published recipe. I, more or less, used the cookbook recipe as a blueprint and then did my own thing. The result was by far my favorite version of a spinach lasagna to date. Finally, a winner!!!!

Spinach & Mushroom Lasagna
Adapted From: America's Test Kitchen Light & Healthy 2010 cookbook

Ingredients:
2 Tablespoons of olive oil
1 onion, diced
4 cloves of garlic, minced
1 package of sliced mushrooms
2 bags of fresh, baby spinach
3 cups of milk
3 Tablespoons of corn starch
salt and pepper to taste
1 teaspoon of fresh nutmeg, grated
2 bay leaves
1 cup of Parmesan cheese, divided
8 ounces of low-fat cottage cheese, small curd
1 egg
1 cup of shredded asiago cheese
1/2 cup of shredded fontina cheese
1/2 cup of shredded mozzarella cheese
1 box of your choice of lasagna noodles, cooked & drained
cooking spray
fresh basil, chiffonade

Directions:
Preheat oven to 425 degrees. Cook and drain the lasagna noodles as needed. Run noodles under cool water to prevent sticking and set aside.

In a large skillet over medium-high heat, saute onions and mushrooms until onions soften and are translucent and mushrooms are cooked. Add salt to taste. Add garlic and cook for another 30 seconds. Add grated nutmeg and bay leaves. Turn heat down to low, and add milk. Sprinkle in corn starch while whisking continuously. Turn heat back up, until milk mixture is simmering but not boiling (keep whisking during this step). When mixture thickens into a sauce, stir in the spinach leaves until they are wilted. Remove from the heat and add 1/2 cup of Parmesan cheese to the mixture. Season with salt and pepper, as needed. Set aside.

In a blender or food processor, combine the egg, cottage cheese, and a pinch of salt until smooth in consistency. Set aside.

To assemble the lasagna: Spray 9 x 13 casserole dish with cooking spray. Layer noodles on the bottom of the pan. Spread half of spinach/mushroom mixture on top of noodles. Sprinkle half of shredded asiago, mozzarella, and fontina cheeses. Add another layer of noodles. Top layer with cottage cheese mixture. Add another layer of noodles. Top with the remaining spinach/mushroom mixture, shredded cheeses, and Parmesan cheese. Bake for 20 minutes. At the end of the cook time, turn on the broiler on high to get the cheese brown and toasty for approximately 3-5 minutes. Remove from oven and let cool for 10 minutes before cutting into squares. Sprinkle with fresh basil. Serve and enjoy!



The Result:
This took a little time to put together, but it was well worth the effort. The husband and I both had seconds, and I could not stop taking bites out of the pan as I put away the leftovers. Needless to say, we all loved this dish, and it will be one that I make again.

Lasagna Rolls with Roasted Red Pepper Sauce

Greetings! I found this recipe in one of my favorite resources, Cooking Light's Everyday Favorites cookbook. It was much less labor-intensive than regular lasagna and much more healthful. The sauce reminded me of a yummy twist on a classic romesco sauce. It was very flavorful and balanced, without being too heavy or overpowering. Yum! Easy to put together, satisfying, and mighty tasty. What more can you ask for??? I love finding "keeper" vegetarian recipes, and this one fits the criteria. My whole family loved it!

Lasagna Rolls with Roasted Red Pepper Sauce
Adapted From: Paulette Mitchell, Cooking Light, APRIL 2004 (published in Cooking Light's Everyday Favorites cookbook).

Ingredients:

Lasagna:
1/2 box uncooked whole wheat lasagna noodles (use at least 8 whole noodles minimum)
4 teaspoons olive oil
1/2 cup finely chopped onion
1 (8-ounce) package presliced mushrooms (I used crimini)
1 (6-ounce) package fresh baby spinach
3 garlic cloves, minced
1/2 cup (2 ounces) shredded mozzarella cheese
1/2 cup part-skim ricotta cheese
1/4 cup minced fresh basil, divided
1/2 teaspoon salt
1/2 teaspoon crushed red pepper

Sauce:
1 tablespoon red wine vinegar
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
2 garlic cloves, minced
1 (14.5-ounce) can diced tomatoes, undrained
1 (7-ounce) bottle roasted red bell peppers, undrained
1/4 teaspoon crushed red pepper
Parmesan cheese, grated (optional, for topping)

Directions:
Preheat oven to 350 degrees.

To prepare lasagna, cook noodles according to package directions, omitting salt and fat. Drain and rinse under cold water. Drain.

Heat oil in a large nonstick skillet over medium-high heat. Add onion, mushrooms, spinach, and 3 garlic cloves; sauté 5 minutes or until onion and mushrooms are tender. Remove from heat, and stir in cheeses, 2 tablespoons basil, 1/2 teaspoon salt, and 1/2 teaspoon crushed red pepper.

To prepare sauce, place vinegar and remaining ingredients in a blender; process until smooth.

Place cooked noodles on flat surface; spread 1/4 cup cheese mixture over each noodle. Roll up noodles, jelly-roll fashion, starting with short side. Place the rolls, seam sides down, in a shallow 2-quart casserole dish. Pour the sauce over the lasagna rolls. Sprinkle with grated Parmesan cheese to taste (optional) and bake for 10-15 minutes, or until all ingredients are warmed through. Top with 2 Tablespoons of remaining basil. Serve and enjoy!

The Result:
This dish was great!!! It was everything I love about a good pasta dish; full of flavor, satisfying, and comforting. I ended up having another half serving, which is something I rarely do these days. It was so good, I just couldn't help myself!!! Best of all, I was surprised at how easy it came together.

The original directions suggest microwave cooking for the final steps, but I just couldn't bring myself to do it. In my experience, pasta gets a little rubbery from the microwave. I just wasn't comfortable with finishing my yummy dish in that manner. (The microwave is for reheating in my house...not cooking.) Instead, I amended the directions for a short cook time in the oven. It turned out great, and I didn't have to worry about botching it up with rubbery pasta.

I ended up making more than the 4 servings, since I cooked a half a box of lasagna noodles. I think my portions ended up working out to about 6-8 servings (of 2 rolls for each person). I am actually glad it happened that way, since I now have lots of leftovers to freeze and/or eat for lunches this week. This is a vegetarian winner!!!

Buffalo Chicken Lasagna

My friend Claire made this recipe from the Make It Fast, Cook It Slow cookbook by Stephanie O'Dea recently and it turned out yummy. I can write with confidence that it was yummy because she brought me a sample piece...she is such a good friend! Anyway, I am going to change some things around and just use the original recipe as a blueprint. Thank goodness that Claire and I like a lot of the same foods, otherwise I wouldn't have her blog to steal ideas from!!! I think a fresh green salad and this lasagna will make a very tasty meal.

Buffalo Chicken Lasagna

Ingredients:
cooking spray
1 box of no-boil lasagna noodles
2 cooked chicken breasts, cubed and seasoned with salt and pepper to taste
1 jar of prepared pasta sauce
1 1/2 cups buffalo wing sauce (I used Frank's Hot Sauce. If you like it less spicy, use less hot wing sauce.)
1/2 of a small red onion, diced
1 jar of roasted red and yellow bell peppers, diced
1 small can of sliced green olives
1/2 tub of low fat cream cheese (about 4 ozs.)
1/2 tub of part skim ricotta cheese (about 4 ozs.)
1 package of dry ranch dressing mix
1 cups shredded cheese (I am using fresh mozzarella)
1/4 cup blue cheese crumbles (I am using blue cheese on top of half of the lasagna)
1/4 cup of smoked Gouda, shredded (I am using the smoked Gouda to the top of the other half of the lasagna--my husband hates blue cheese)

Directions:
In a large glass bowl, combine cooked and chopped chicken breast, the pasta sauce, and the buffalo wing sauce. Then, in a separate bowl mix ricotta cheese, cream cheese, and ranch dressing together, and set aside.

Ladle a big spoonful of the sauce mix into the bottom of a greased 9 x 13 casserole dish. Cover with a layer of lasagna noodles. Add a smear of the ricotta cheese mix to the top of the noodles. Add a layer of the diced bell pepper, green olives, and onions. Sprinkle on a handful of shredded cheese. Repeat layers until you run out of ingredients.

Add the blue cheese crumbles (or shredded smoked Gouda) to the top, if desired. (I am doing blue cheese on half and the Gouda on the other half.)

Bake at 350 for 30 minutes covered with foil, and then remove foil and bake for an additional 10-15 minutes or until the top cheese becomes slightly browned and bubbly. Remove from oven and let cool for 5-10 minutes. Cut into squares and serve!



The Result:
This was yummy with a bit of a lip-tingling, spicy, hum to it. We all really liked it...even my 4 year old. If you like things a little more tame, remember to cut down on the amount of hot sauce used. My family is comprised of a bunch of spicy food freaks; so if that is not your bag, adjust the recipe accordingly. As for the types of cheese I used...ummmm perfection! Dare I say, I liked the smoked Gouda cheese on top almost more than I liked the blue cheese. I love blue cheese, so that really surprised me. The smoked Gouda added a real depth to the overall flavor of the dish. The only negative thing I can say about this dish is that it was messy. Once I cut into this lasagna to serve, it fell apart and was a little soupy. I don't mind ugly food, so I was okay with the messy pile of noodle parts on my plate. Other than that, it was still totally delicious!

Jen's Slow Cooker Lasagna

I decided not to post yesterday, since our meal was comprised of take out food. I figured that no one would be really upset if I did not do a full post on something that was obtained through a drive thru window.
Actually, the husband's parents brought a bucket o' chicken over for dinner last night...so the nice part was that I was off the hook for cooking. We went the super-lazy route and even did paper plates! Not only did I not have to prepare a meal, but there were not any dishes either. It was quite a sweet deal, let me tell you!!! I really appreciate "no cooking" nights.

I am going to go the easy route again tonight, and do a slow cooker lasagna recipe. I have never tried to make slow cooker lasagna before, so this will be an adventure for all of us. Basically, I plan on taking my mom's lasagna recipe and adapting it for crock pot cooking.

On another note...I have discovered that I break slow cookers' like nobody's business. I just broke another one last week...one that I have had for only about a year! So, once again I find myself with a brand new slow cooker. Sigh. I did my research and I hope this new one will be a little more forgiving than my last one. Seriously! I cannot believe that this will be my third slow cooker in just over a year. Double sigh. Oh well, I will let you know how the new one performs and how my lasagna turns out!

Jen's Slow Cooker Lasagna

Ingredients:
Cooking spray
1 box of lasagna noodles, no boil
2 Tablespoon of olive oil or canola oil
1 large onion, diced
1 lb. of Italian sausage (use 1/2 lb. of hot and 1/2 lb. regular)
2 small cans of tomato paste
4 garlic cloves, minced
2 cans of water (use empty tomato paste cans) OR chicken stock
1 can of tomato puree or plain tomato sauce
2 fresh tomatoes, diced
1 Tablespoon of dried oregano
1 Tablespoon of dried basil
1 teaspoon of dried thyme
1 teaspoon of chili powder
2 bay leaves
1 teaspoon of red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon of onion powder
1 ball of mozzarella, shredded
1 cup of grated Parmesan cheese, divided
1 15 oz. container of ricotta cheese
Salt and pepper to taste


Directions:
1) Spray slow cooker with cooking spray and set aside.

2)In a large skillet make meat sauce as follows: Brown sausage over medium-high heat with diced onion, garlic, oregano, basil, thyme, red pepper flakes, chili powder,garlic powder, onion powder, salt, and pepper. Drain grease. Make a space in hot skillet by pushing meat aside. Add tomato paste to empty space in skillet, and let cook for approximately 2 minutes, or until tomato paste starts to brown. Add water and tomato puree (or sauce). Add bay leaves and fresh tomatoes. Let simmer for approximately 5 minutes, or until desired sauce consistency is achieved. Set aside meat sauce.

3)Start layering, by adding tomato sauce in a thin, even layer into the bottom of the slow cooker. (Just use liquid tomato sauce without meat; separate sauce and meat with a spoon.)

4)Add noodles over the sauce in bottom of the slow cooker; approximately 3-4 whole noodles covering the bottom. You may need to break the noodles up to ensure all area is covered.

5)Spoon about 1/3 of the layer of meat sauce onto noodles.

6) Add 1/3 shredded mozzarella and 1/3 Parmesan cheeses over the meat sauce layer.

7)Add another layer of noodles, covering meat sauce layer. Break up the noodles again to fit the slow cooker, if needed.

8) Add the ricotta cheese over the noodle layer, by using your hands to crumble ricotta over the noodles. Then, press ricotta gently with fingers to spread ricotta out evenly over all of the noodles (I find that using your hands is the easiest way to do this).

9) Add another layer of noodles, covering the ricotta.

10) Add another layer of meat sauce, covering the noodles.

11) Add 1/3 shredded mozzarella and 1/3 Parmesan cheeses over the meat sauce layer.

12)Add remaining noodles on top, creating a roof.

13)Add remaining sauce on top of noodles and sprinkle with remaining cheeses.

14) Cook in slow cooker on low for 4 hours.


Jen's Notes:
This still proved to be a labor-intensive method, so I don't know how much of an "easy time saver" this is by doing it in the slow cooker. I didn't have to boil noodles, so that is a plus. Also, the slow cooker allows for a little more flexibility while cooking. Basically, you load everything up and forget about it until it is time to eat. I guess this recipe would be a lot easier if you did not make the sauce from scratch. Then, all you would need to do is mix your favorite jarred sauce with the browned onions, sausage, and garlic and call it good. That would certainly save a lot of steps and ingredients for this dish. I am really curious as to how this version is going to stand up to my regular baked lasagna.



The Result:
This tasted just as good as the original version, but it did not save me any time by doing it in the slow cooker. Removing it from the slow cooker to portion out was a bit tricky, too. It didn't hold together as well as it normally does. So, instead of lasagna squares we got a lasagna pile on our plates. Alas, it was still everything lasagna should be, and I am excited to have the leftovers. I don't know if I will try this method again, or just stick to my original way of doing it by baking it in the oven.

Jen's Mexican Lasagna Surprise & Jen's Super-Easy Guacamole

As with most of my "surprise" recipes, I thawed out some ground beef and I did not have a clear plan on what I was going to do with it. I knew I wanted Mexican food, but I am running low on tortillas. That excluded a lot of possibilities. I decided to assemble a Mexican lasagna of sorts, using lasagna noodles for the layers instead of tortillas. I followed a basic Italian lasagna method, but used Mexican-inspired ingredients instead. I am hoping that it will be really yummy, so keep your fingers crossed for me!!!

Also, I whipped up a batch of guacamole to serve with my "surprise" dish. I love fresh guacamole, and I have two different recipes that I use frequently. The one I used tonight is the easiest, and I will post it below.

Jen's Mexican Lasagna Surprise

Ingredients:
Cooking spray
1 Tablespoon of olive oil
1 lb. of lean ground beef
1 onion diced
4 cloves of garlic, minced
1 small can of green chiles, diced
1/2 cup of salsa
1 teaspoon of cumin
1 teaspoon of coriander
1/2 teaspoon of smoked paprika
salt and pepper, to taste
1 Tablespoon of butter
1 can of refried beans
1 box of no-boil lasagna noodles (I used Barilla brand)
2 (7 3/4 oz. each) cans of El Pato salsa de chile fresco
1 cup of shredded cheddar cheese, divided
3 Roma tomatoes, sliced into disks
1 small can of sliced black olives, drained
sour cream for topping
guacamole for topping
chopped green onions for garnish
chopped cilantro for garnish

Directions:
Preheat oven to 375 degrees. Spray 9 x 13 casserole dish with cooking spray. Add 1 can of El Pato to the bottom of the greased casserole dish. Cover with lasagna noodles. Set aside.

In a large skillet, combine olive oil, ground beef, onions, and green chiles. Sprinkle with salt, pepper, paprika, coriander, and cumin. Cook beef through until no longer pink. Add garlic and cook for an additional minute. Add salsa and mix thoroughly.
Once beef mixture is cooked through, remove from skillet with large spoon and spread it over the lasagna noodles in the casserole dish. Make even layer. Sprinkle beef mixture with 1/2 cup of shredded cheddar cheese. Add another layer of lasagna noodles, covering the beef noodles and set aside again.

In your same skillet (no need to wipe it or wash it out), melt the butter. Add refried beans to melted butter. Using the back of a spatula or wooden spoon, mash and mix the beans with the butter so they are pliable. Once beans are mixed with the butter and soft, scoop out the beans and spread them over the lasagna noodles in the casserole dish. Make sure layer is even. Add another layer of lasagna noodles. Pour second can of El Pato over noodles. Top with tomato slices. Sprinkle shredded cheese over the top. Sprinkle black olive slices over top of the cheese/tomatoes and cover the casserole dish with foil.

Bake covered at 375 degrees, for 45 minutes. Then, uncover and bake for an additional 15 minutes, or until cheese is golden and bubbly. Remove dish from oven and let the lasagna rest for 10 minutes before cutting. Cut into squares and serve. Top with chopped green onions, chopped cilantro, sour cream and/or guacamole, and enjoy!

Jen's Super-Easy Guacamole

Ingredients:
4 ripe avocados, diced into chunks
Your favorite salsa
lemon juice
lime juice
salt and pepper

Directions:
Combine all ingredients to taste in a bowl with a fork. Mash some of the avocado, using your preference for creaminess/chunkiness as a guideline (i.e. mash it more for a creamier texture, and less for a chunkier texture). Adjust seasoning, if needed.





The Result:
This dish is a total keeper! It was soooooooo yummy!!! I am really happy with how this recipe turned out, and I would not hesitate to make it again. The lasagna noodles worked out perfectly, and the sauce gave it a slightly spicy edge. Yum! All the layers worked in perfect union with the others, and I loved my guacamole with it. Fan-freakin'-tastic!!!

Mom's Lasagna

This is the dish I was going to make last night, but opted not to, due to time constraints. As you can see by the written recipe below, it is much more labor-intensive than last night's pizza dinner. I would never accuse this recipe of being a fast fix meal idea. There are a lot of little steps to this recipe that get fairly cumbersome. I generally only make this dish about once or twice a year, because of that reason. With that being said, this is my favorite lasagna ever! Admittedly, it is kind of a pain to make, but it is worth it. A lot of this recipe relies on the cooks' ability to sense when each step is done. It would be much easier to demonstrate how each step is supposed to look while cooking, versus explaining by a written recipe process.
This is the lasagna of my childhood...a hearty, comforting, 'take-your-pants-off-and-take-a-nap-after-dinner' type of lasagna. This is truly my mom's recipe that was passed down from my grandmother, with only one minor nutritional change from me (I added the spinach to the ricotta, due to my chronic vegetable guilt).

Ahhh...lasagna. I cannot wait to eat tonight!

Mom’s Lasagna

Ingredients:
1 box of lasagna noodles, cooked
1 Tablespoon of olive oil
2 cans of tomato paste
1 Tablespoon of oregano
4 garlic cloves, minced
1 large onion, diced
2-3 cans of water (use empty tomato paste cans)
1/2 can of tomato puree
1 teaspoon of chili powder
1 ball of mozzarella, shredded
1 cup of grated Parmesan cheese, divided
1 container of ricotta cheese
2 tubes of Italian sausage (hot and regular)
Salt and pepper to taste
1 teaspoon of Italian seasoning
1 package of frozen spinach, thawed and squeezed/drained of all water
1 teaspoon of red pepper flakes
1/2 teaspoon garlic powder
1/2 teaspoon of onion powder
Cooking spray

Directions:
1)Preheat oven to 350 degrees. Spray 9 x 13 glass casserole dish with cooking spray and set aside. Cook and drain noodles, rinse with cool water and then coat with a small amount of olive oil and set aside.

2)Mix ricotta, Italian seasoning, red pepper flakes, onion powder, garlic powder, and spinach in a medium sized bowl. Season with salt and pepper to taste. Set aside.

3)In a large skillet make meat sauce as follows: Brown sausage over medium-high heat with diced onion, garlic, oregano, chili powder, salt, and pepper. Drain grease. Make a space in hot skillet by pushing meat aside. Add tomato paste to empty space in skillet, and let cook for approximately 2 minutes, or until tomato paste starts to brown. Add water and tomato puree. Let simmer for approximately 5 minutes, or until desired sauce consistency is achieved. Set aside meat sauce.

4)Start layering, by adding tomato sauce (just use liquid tomato sauce without meat; separate sauce and meat with a spoon) into bottom of casserole dish, into a thin, even layer.

5)Add cooked noodles over the sauce in bottom of dish, approximately 3-4 whole noodles (covering bottom).

6)Spoon 1/2 spinach ricotta layer over noodles, and spread in even layer.

7)Add ½ of the tomato meat sauce over spinach ricotta mixture, as evenly as possible.

8)Add ½ shredded mozzarella and ½ Parmesan cheeses over the meat sauce layer.

9)Add another layer of cooked noodles, covering meat sauce layer.

10) Add remaining spinach ricotta mixture over noodle layer.

11) Add most of remaining meat sauce mixture, holding small amount of plain tomato sauce (without meat, just liquid sauce) back.

12)Add 3-4 cooked noodles on top (creating a roof).

13)Add remaining sauce and cover with remaining cheese.

14)Cover with foil and bake for 25 minutes. Uncover and bake for an additional 10 minutes or until cheese is golden and bubbly.

Jen's Notes:
As I mentioned above, this is one of those recipes that you have to cook by using your senses, and not follow the recipe to the letter. All quantities are estimated, and somewhat flexible.



The Result:
This was awesome! I had some issues with ingredients, but I was able to overcome adversity. First, I did not have enough sauce items. I thought I was all stocked up, but when I went to my pantry, I found that the only sauce item I had was diced tomatoes. Ugh. Luckily, I had some improvised pizza sauce from last night left over. I combined that with the diced tomatoes, and I was able to pull off a decent (albeit not traditional) sauce. The result was still excellent. Then, I was short on ricotta so I added a couple ounces of cream cheese to the mix. Again, this was great in a pinch, and tasted pretty darn fabulous! I only used 1 tube of sausage, so the meat was a little sparse...no one seemed to notice. I ran out of mozzarella cheese, so I substituted with shredded Colby jack (talk about non-traditional). I compensated by adding a little more Parmesan that I normally would. Lastly, I did not have enough sauce for the top layer, so I just put cheese over the top layer of noodles and called it a day. Now that I think about it, this was really not like the above recipe at all. This was more of a facsimile of my Mom's Lasagna, since I did not have all the right ingredients. A Ghetto Lasagna, if you please. Ultimately, I will always favor my mom's version, but I think that this was a worthy effort.

Pasta & Co. Black Bean Lasagna

I am still a little defeated from last night's dinner debacle. I was debating if I should try this new recipe tonight, or save it for another time...due to my loss of confidence. Then, I was inspired by the Olympics. An Olympic athlete would persevere....and so will I! I may not be able to pole vault or dive or swim or play beach volleyball or do gymnastics or platform dive or run or throw a disk thingy or jump hurdles or....(okay, we would be here all day if I listed all the events that I would suck at)....BUT I CAN COOK! I MUST COOK! I think I can...I think I can...

Okay, enough tomfoolery. I photocopied this recipe from my friend Claire's Pasta & Co. Encore cookbook. It looks really tasty and I cannot wait to try it. I love all the flavors included in the ingredients, but I am dying to find out how the whole thing comes together. This is a long recipe, so prepare yourself...

Pasta & Co. Black Bean Lasagna
Serves 6 to 8

Rice mixture:
1 can (15 ounces) black beans
2/3 cup uncooked brown rice
1 teaspoon ground cumin
1 teaspoon ground coriander
Heaping ¼ teaspoon salt
Heaping ¼ teaspoon freshly cracked black pepper
1 cup frozen corn, thawed, rinsed and drained but not cooked
½ cup plus 1 tablespoon vegetable stock
1/3 cup seeded and diced Anaheim peppers
1 can (4 ounces) chopped green chilies, well drained
3 tablespoons finely chopped cilantro

Bean sauce:
¾ cup vegetable stock, divided
2 tablespoons finely diced onion
2 teaspoons finely minced garlic
½ teaspoon ground cumin
½ teaspoon ground coriander
½ teaspoon chili powder
1/8 teaspoon pepper
1-½ teaspoons dry sherry
½ teaspoon sherry vinegar
1 tablespoon tomato paste
2 tablespoons finely chopped cilantro

To assemble:
2 2/3 cups marinara sauce
6 sheets fresh lasagna (or enough cooked dried lasagna noodles to make three layers in a 9-by-13-inch pan)
1 cup nonfat quark or ricotta cheese
2 2/3 cups grated part-skim mozzarella cheese
¼ cup freshly made bread crumbs

Directions:
1. To prepare the rice mixture: Drain the beans, reserving the liquid. Measure 2/3 cup of the beans for the rice mixture and reserve. Save the remaining beans and liquid for the bean sauce.

2. Cook the rice according to package directions until tender. In a dry skillet, roast the cumin and coriander, taking care not to burn them. Mix hot spices with cooked rice, stir in salt and pepper, and let cool. Stir in corn, vegetable stock, Anaheim peppers, chilies, cilantro and reserved 2/3 cup black beans. Set aside.

3. For the bean sauce: Place 2 tablespoons of the vegetable stock in a saucepan. Add onion, garlic, cumin, coriander, chili powder, pepper, sherry and sherry vinegar. Simmer 3 minutes. Add tomato paste and the remaining black beans and their liquid and cook for another 8 minutes. Remove from the heat.

4. Place bean mixture in the work bowl of a food processor equipped with a steel blade. Process until almost smooth, leaving some pieces of bean intact. Add the remaining vegetable stock and cilantro. Reserve.

5. To assemble: Spread 2/3 cup marinara sauce in the bottom of a shallow 9-by-13-inch baking dish. Cover with one layer of uncooked fresh lasagna (or cooked dried) noodles. Spoon on half (about 2 cups) of the rice mixture and ¾ cup of the bean sauce. Top with ½ cup of the quark or ricotta and 1-¼ cups of the mozzarella. Cover with another layer of lasagna noodles and 1 cup marinara sauce. Follow with the same amounts of rice, black bean sauce and cheese as before. Top with the last layer of noodles and press lightly with fingertips to distribute ingredients evenly in the layers. Top with the last cup of marinara sauce, the remaining mozzarella and bread crumbs.

6. Preheat oven to 400 degrees. Bake lasagna for 35 minutes, or until sauce bubbles around the edge and top is nicely browned. If top browns too quickly, cover with aluminum foil during last 10 minutes of cooking. If baking lasagna straight from the freezer, add about 20 minutes to cooking time. Once out of the oven, let lasagna set up for approximately 15 to 20 minutes before cutting. (This is critical for ease of serving.)
