All-In-One Chicken Dinner


I don't really know what to call this recipe, other than delicious and easy. I had a late afternoon hair appointment, so I prepped this meal early for the husband to throw into the oven at dinner time for himself and the kiddos. I left the pan in the fridge all ready to go with instructions written on the aluminum foil cover. All he had to do was put it in the over and serve it up. He reported back that everyone loved it and it was ridiculously simple; which I confirmed later that evening when I got home and had a plate myself. This is a great dinner idea to have in your back pocket for when you want a homey, comforting meal but don't want to put in a ton of effort. Easy-peasy!

All-In-One Chicken Dinner

Ingredients:
cooking spray
8 small red potatoes cut into chunks
4-6 chicken breasts
1 lb. of fresh green beans, ends cut off
1 stick of butter, melted
1 envelope of dried Italian Salad Dressing
salt and pepper to taste

Directions:
Spray 9 x 13 pan with cooking spray. Place green beans, chicken and potatoes in neat rows (length-wise) across the pan. Make sure the chicken is in the middle row. Melt one stick of butter in the microwave and drizzle it over the potatoes, poultry and veggies evenly. Sprinkle the Italian Salad Dressing over the top. Use a little salt and pepper to taste (especially on the potatoes) for additional seasoning. Cover the top with foil.

(At this point you can either store in the fride and bake later or cook it now.)

Bake covered at 350 for 45 minutes to 1 hour, or until potatoes are soft and chicken is cooked through.
